Description
Mom's beautifully bountiful salad makes a colorful culinary statement on the dinner table.
Pictured are all-organic ingredients:: celery, heirloom tomatoes, red cabbage, grated carrot, cucumber, cilantro, romaine lettuce, arugula and cauliflower. It is garnished with organic homegrown chive blossoms and leaves, and sprinkled with mixed nuts and organic dried cranberries. Mom's favorite homemade organic "thousand island" dressing adds the finishing touch.
One health care expert I heard speak at a lecture recommends salads have a minimum of three major colors for overall good health (e.g., the greens of lettuce, kale, parsley and cilantro; the reds of beets, tomatoes, radishes [skin], and red bell peppers; the purples of red cabbage, purple kale and purple carrots; the oranges of carrots, golden tomatoes and edible flower blossoms; and the creamy hues of cauliflower, etc.)
May this image inspire many people to maintain healthy eating habits. Just think: if each person in America would commit to a lifestyle of healthy diet, regular exercise, adequate water intake and quality rest and sleep -- these simple yet powerful tools -- just imagine the billions of dollars of health-care costs that would be saved! It would truly have an incalculable benefit on our nation's economy, not to mention our well-being and longevity! :-)
Indeed, real health-care begins in the kitchen (and garden/farmland where our food is grown). Hippocrates, considered the "father of medicine", put it best:: "Let food be thy medicine, and medicine be thy food."
