Description
Since my birthday is coming up, I wanted to post my healthy version of a celebration in lieu of a cake.
An assortment of organic vegetables and fruits (since peppers and tomatoes are technically fruits) makes a colorful celebratory statement in this tribute to healthy food choices.
Featured are: rainbow chard, Easter egg radishes, rainbow carrots, red cabbage, onion, Brussels sprouts, heirloom tomatoes, cherry tomatoes, rainbow mini-peppers, red treviso endive, red loose leaf lettuce, cilantro, orange and purple cauliflower, celery, kale and curly endive.
This still-life portrait is based on one I did while on assignment with National Geographic Your Shot.
It is truly an honor to continue Mother Cheryl's legacy of healthy eating in her loving memory, to the glory of God.
Eating a healthy diet with plenty of vegetables and fruits is fun and full of benefits such as more energy, vitality and longevity.
And the scientific evidence is compelling.
According to a Harvard University Study:
"A diet rich in vegetables and fruits can lower blood pressure, reduce the risk of heart disease and stroke, prevent some types of cancer, lower risk of eye and digestive problems, and have a positive effect upon blood sugar, which can help keep appetite in check. Eating non-starchy vegetables and fruits like apples, pears, and green leafy vegetables may even promote weight loss." [1]
I am reminded of a Scripture which my parents and I taught at Shiloh Bible College in our course, "Healing and Health, God's Way"::
"Therefore, whether you eat or drink or whatever you do, do all to the glory of God."
1 Corinthians 10:31
So the next time you want to reach for that slice of cake or that cookie or candy ~
Instead...
Try reaching for a delicious salad or fruit that is teeming with color and vitality.
Your body will thank you for it!
